Our commitment to crafting exceptional wine begins in the vineyard. The grapes that grace this exquisite wine are sourced exclusively from a singular Shiraz vineyard, a testament to our dedication to quality. This particular vineyard, planted in 1992, holds a special place in our hearts. In a bygone era, it thrived alongside tobacco crops, and today, it stands as the sole grape-bearing site on our esteemed Helderberg property.
The art of winemaking hinges on the precise moment of grape harvest. For this exceptional Shiraz, our grapes are hand-picked at the optimal ripeness, precisely when they reach between 24° and 25° Balling, ensuring a perfect balance of flavors and maturity.
Once the grapes arrive at our cellar, the meticulous winemaking process unfolds. The grapes undergo a gentle crushing, followed by a 24-hour cold maceration in open fermenters, enhancing the extraction of flavor and character. To elevate the wine’s complexity, we introduce select French yeast strains, allowing fermentation to occur naturally on the skins for a duration of 10 days. During this transformative period, our dedicated team conducts manual punch downs of the cap every 2 to 6 hours, ensuring the gentle coaxing of tannins and the infusion of essential qualities.
Following this phase, the juice is thoughtfully separated from the skins, progressing to complete its alcoholic and malolactic fermentation journey in stainless steel tanks. This thoughtful approach preserves the wine’s distinct characteristics while enhancing its overall finesse.
